Rava Besan Ladoo - Dussehra Special !!!

Ingredients:
1.One cup fine semolina.(Rava)
2.Two cups besan.
3. One and a half cup Ghee.
4. Four cups sugar.
5. Two and a half cup water.
6. Cardomom powder - 1 Tablespoon.
7. Raisins and Almonds.



Method:

1. Take half of the ghee and heat it in a kadhai.
2. Put the besan in it and roast it on the ghee.



3. Keep the flame low and stir it continuously.
4. Take it off the fire when it becomes slightly reddish brown.
5. Now take the remaining ghee and heat it another kadhai.
6. Put the rava in it and roast it on low flame, stirring continously.



7. Once it becomes golden brown, remove from the fire.
8. Boil the measured quantity of water and sugar together till it forms a mixture of a slightly thick density.
9. Take out half a katori of the above sugar-water mixture aside.(Use it later , if required)
10. Mix the roasted besan and rava and put them in the remaining sugar-water mixture.


11. Put the cardomom powder, raisins in the mixture and mix it properly and keep it aside.
12. After 2-3 hours, make medium sized ladoos by hand.


13. Garnish each ladoo with finely cut almonds and raisins.
14. Serve and enjoy. !!!

Sitaphal Rabdi !!!







Ingredients:
1 litre whole milk
1 tsp chopped red rose (gulab) petals
8 almonds (badam)
1/2 tsp saffron (kesar) strands
1/2 tsp cardamom powder
125 gms cup sugar (cheeni)
1 cup sitaphal (Custard Apple) pulp
raisins/pistas for garnishing.




How to make sitaphal rabdi:
1.Put the kesar strands in a little milk and keep it aside for sometime.
2.Boil milk in a heavy pot.
3. Stir while boiling.
4. Boil the milk till it gets reduced to almost half the quantity.
5.Mix in sugar and stir till dissolved.
6.Take off fire and mix the cardomom powder and kesar.
7.Mix in sitaphal pulp and keep in fridge for 2-3 hours.
8. Serve the rabdi in glass bowls.
9. Decorate it with red rose petals and dryfruits of your choice.

Enjoy !!!

Tip: Dont grind the sitaphal pulp in mixer.Crush it a bit with a heavy spoon or hand.The ungrounded pulp of the fruit gives an amazing texture to the rabdi.

Apple ki kheer

I tried this receipe of peeled and grated apples,condensed milk, sugar and saffron. It turned out pretty good.
Garnished with almonds, raisins and red cherries. :-)

The Bougainvellia petals !



As I was walking down the footpath in the morning today…I saw some bougainvellia flowers fallen on the ground..something made me stop and observe them carefully..i noticed that they were fresh..they had fallen not so long ago..their vibrant pink..caught my attention…I had this urge of collecting them in my duppatta..making it like a jhola...looking at them I got lost into the vast possibilities for which I cud use them..like I wanted to dry them completely and then paste them in different arrangements..i could just pick them up and float them in a shallow vase…or simply just gaze into them and see the flower inside…or just imagining to extract that particular shade of pink and put it in a bottle and use it for future use…or just gaze at it in the sunlight and see the fine veins running in the petals…or just admire this god’s beautiful creation which is so symmetric..so lovely and so perfect….but but ..there is a big but….It is lovely and perfect ..but it is lying on the ground….it will wilt in another 1 hour..or so..it will get mixed up in the mud and sand…it will just become a part of the earth again..its existence was so momentary…god made it beautiful..but that flower had no admirer except me…I admired it because it caught my attention..and I had that eye to see it that way…but no one else looked at it the way I saw it...god wants to convey something to all of us..there is hidden meaning to everything..he wants to teach a lesson to us all…the lesson is we must find the way to see beauty everywhere around us….even imperfection is beautiful..important thing is to have an eye for beauty..and it can be present anywhere… even on a footpath..in the dust..like I found today…..i was wondering all of this..unaware of the fact that people had started staring at me…I came out of my trance..smiled to myself…and walked on.

Eating out places in Pune :)

Hi, I thought of writing something about the restaurants which I have visited in Pune. Pune, as it is called the city of foodies...no doubt it has some great food serving restaurants... here i go describing my experiences at some of these...:)

Oh Calcutta : In one word, I would call this as a very "Classy" place.Right from the lighting, decor, the music..they have taken great pains in making the ambience in tune with the bengali style and culture. Beautiful instrumental music of hindi songs is played in the background...which if one listens carefully ..all the evergreen classic songs which have been music directed by Bengali music legends are played.
There are pictures on the wall of scenes of calcutta...
We ordered fish, rice and a potato subzi.. and yes a mocktail by the name of some "Seventh heaven"..and of course ended the dinner with heavenlish "Malpua"..it was too good.


Marjorin :) One word which comes to my mind at the thought of Marjorin is 'Sandwiches'..:) awsome sandwiches..and some great fresh pastries along with them..yummy... The restuarant is set in a beautiful old style bunglow... I particularly like the old world charm the place has got... tall ceilings, tall huge wooden doors,winding elaborately ornated wooden staircase....One could spend hours together ..sitting on the first floor, nibbling the heavenlish sandwich and looking at the traffic and the hustling bustling crowd down below on the road..
Its cool..:)


Rajwada: As the name suggests....I felt that the place has got a palace like feel to it...I mean I felt it that way. It has an impressive entrance. We went there in the winter season. Winters in Pune are quite cold...there were these bonfires lit at various places in the huge garden around which tables were laid out for people to eat and enjoy in the warmth of the lit fire in the cold night.We preferred to sit inside. I remember enjoying delicious assorted pakoras made of chillies, gobhi, potato, onion ....
I remember looking at huge paintings put up on the walls of the inside of the hotel depicting palace scenes..royal scenes etc....
It was a nice cozy warm experience at Rajwada on that cold january day.. :)

Vaishali Hotel: I think I will always associate Pune with Tekdi and Vaishali hotel.
Vaishali hotel on the FC road… I can eat its SPDP countless number of times. I have never eaten SPDP anywhere else like that the one made at Vaishali. I think the manager knows us by our faces now…considering the number of times we have visited the place ..SPDPs, idli sambar, chai or chickoo shakes is usually what we order everytime. They have this water fountain in the middle of the place…which gives a very soothing effect to the whole area.One can often see children playing with the water. The entire place is covered under a canopy of trees and there are also many plants planted around… It gives a very green , cool effect. In summers they use those mist blowers which keep the restaurant cool.. Its kinda nice to eat while surrounded by mist. :)
You go any day of the week, this place is always crowded… Waiting for average 20 minutes is quite normal… I used to wonder ....how come people have the patience to wait for so long.. but slowly… as they say.. the city grows on u ….this place grew on me  Now I actually enjoy waiting there… You wont believe it.. but it feels quite nice to be a part of the lively, chit chatting crowd.. . Letting those positive vibes of the place have a calming effect on u. Standing there and listening to the water flowing in the fountain…dreaming about the soft idli dipped in the awesome sambar…. The chatpati SPDP…oh..out of this world ..:)


Roll House:
Amazing sizzlers Not very spicy…and of course delicious manchurian soup…. we really enjoyed having dinner there. The service was superb. The place is dimly lit which gives it a cozy effect… I remember they had hung very beautiful lampshades.. The place has this long sofa arrangement.. so that u know.. lots of people can sit together facing each other… very good seating arrangement.. I particularly remember people coming in big groups and ordering right away.. without wasting any time…It seemed the restaurant is very popular with the people living nearby..

Kehwa café: Have you heard of Paan shake? Yes, the beetle paan … They had this Paan shake which we ordered. It was real good. They had topped the shake with real beetle leaf etc.. it was innovative..:)
There were newspaper cuttings hung on the walls of the restaurant.. which described about the restaurant and the specialities it offers. There was a corner for people to enjoy flavoured hookah.
I liked the smiling brown face made on the top of the cream of the coffee which was given in large mugs. I liked their creativity.

Corn ka bharta !!!



Anything made of corn tastes good... tdy I tried making Corn ka bharta..and it turned out real good..:)


ingredients:

1 tsp coriander powder
1 tsp turmeric powder
1 kg fresh corns
1 tsp red chilli powder
2 tblsp oil
3 medium tomatoes
1/2 tsp garam masala powder
3 medium onions
1/2 tsp cumin seeds
6 - 7 green chillies
salt to taste
coriander leaves cut for garnish

Apple shake topped with red cherries !!!

Saffron Pulav with peas :)

Coconut Rava Ladoos garnished with raisins :)

Maharashtrian thali for you :)


1. Puran poli.

3. Masale Bhat.
4. Aloo chi bhaji.
5. Aloo chi vadi :)
